Monteblanco Fuji Apple comes from Finca Monteblanco in Huila, Colombia, where Purple Caturra is grown at 1,500 MASL and processed through co-fermentation to bring out a brighter, more expressive fruit profile.
In the cup, crisp Fuji apple leads with a fresh, juicy character, followed by soft honey sweetness and a delicate tea-like finish. As the coffee cools, the sweetness becomes more pronounced while the cup remains clean, balanced, and transparent.
For the roast, we kept the profile light and intentional to preserve the coffeeās natural clarity and fruit character. Rather than pushing for heavier development, we allowed the Fuji apple, honey, and tea notes to unfold naturally, resulting in a bright and approachable cup with gentle complexity.
