727 Coffee & Co. opens its doors in the heart of Subic Bay, introducing a more intentional specialty coffee experience rooted in Japanese coffee culture. Established on November 21, 2021, the café began as a humble 20sqm hole-in-the-wall space inside the CBD district of Subic Bay, built with the vision of creating a destination where people could experience what truly good coffee means beyond the commercial norm.

As an ambassador of specialty coffees from Japan, 727 is a multi-roaster café that brings home carefully selected beans from some of Japan’s most respected roasters. From Kyoto to Tokyo, the café proudly collaborates with renowned names such as Kurasu, Fuglen, Ult Coffee, Barista Map, Mel Coffee, and many more — carefully curating coffees that reflect the craftsmanship, precision, and culture deeply embedded in Japanese specialty coffee.

Inspired by modern Japandi interiors — a balance between Japanese minimalism and Scandinavian warmth — the space was designed to provide more than just coffee. Every detail, from the ambiance to the menu and customer experience, was intentionally curated to create a sense of comfort, calmness, and connection.

During a time when specialty coffee was still slowly emerging in Subic Bay, 727 Coffee & Co. saw an opportunity to help shape and educate the local coffee scene. Through carefully brewed cups, thoughtful service, and meaningful conversations, the café introduced the difference between commercial coffee and the artistry of third-wave specialty coffee — encouraging people to appreciate quality, origin, brewing, and experience on a deeper level.

Alongside its coffee program, 727 also became a proud partner of Marukyo Koyamaen from Uji, Kyoto Japan, bringing authentic Japanese matcha culture closer to the local community and further expanding its dedication to craftsmanship and quality.
